Recently, I came across a social media page dedicated to sharing updates about businesses and properties coming to Texas — fittingly named “Coming Soon Texas"  on Facebook. While it may not be the Mediterranean food chain many were hoping for, something delicious appears to be on its way to Harker Heights.

Construction is reportedly set to begin on March 24, 2026, with a projected completion date of June 24, 2026. Allegedly, 85°C Bakery Café has chosen the former Genghis Grill location at 201 E. Central Texas Expressway as its new home.

After doing a little research, I learned that 85°C Bakery Café is an international bakery chain. It operates in a similar style to Starbucks, but with a unique Asian-European fusion twist. Customers can expect gourmet coffees, specialty drinks, and a variety of fresh pastries and breads.

While many of us were hoping for Cava, the bigger picture is that change is finally coming to that once-busy building that has been empty for so long. Why not give it a try?
