Why Harker Heights Locals Are Buzzing About the Newest Sandwich Spot

The group, known as Coming Soon Texas, just announced that Potbelly Sandwich Shop is headed to Harker Heights. This is not your typical sandwich shop, although to me it feels very familiar—somewhere between Jersey Mike’s and maybe a little bit of Subway mixed. Known for their delicious sandwiches, this particular establishment has reportedly registered about $400,000 in renovations, according to Coming Soon Texas.

Where Will The Potbelly Sandwich Shop Be Located?

The renovations will take place at the 201 E. Central Texas Expressway, Suite 13 location, which means the restaurant will be located in the well-known Market Heights shopping center. Sources say the building’s square footage will be around 1,619 square feet, with the tenant approval for a space previously occupied by another restaurant. Actual construction on the sandwich shop is expected to begin May 1, 2026, with the project estimated to be completed by August 1.
