Central Texas Barbecue Sizzles in 2025 Rankings

Two Central Texas smokehouses are leading the charge in the latest Texas Monthly Top 50 Texas BBQ Joints list and this year, the spotlight shines brightly on Rossler’s Blue Cord Barbecue in Harker Heights and Miller’s Smokehouse in Belton. Released only once every four years, the list is the holy grail for pitmasters, and these local favorites proved they can hang with the best of the best.

From the Barracks to the Brisket Hall of Fame

Rossler’s Blue Cord Barbecue has made a name for itself in the military-heavy town of Harker Heights while they turn out smoked meats that command respect. It’s a veteran-owned spot with a fiercely loyal following, and now it’s earned statewide recognition as one of Texas’ finest. It’s not just about feeding hungry soldiers anymore. Now it’s more about earning a place in barbecue royalty.

Belton’s Best Keeps Rising

Just up the road is Miller’s Smokehouse in Belton. Miller's continues to build on its reputation. Miller’s is known for its family roots and creative menu, and they have become the spot for locals and a destination for barbecue pilgrims. This recognition confirms what Central Texans already knew: Miller’s isn’t just a neighborhood gem. It’s a statewide contender.

Austin’s Still on Fire

Of course, Austin continues to dominate the rankings. LeRoy and Lewis and InterStellar BBQ both hit the Top 10, and Franklin, La Barbecue, KG BBQ, and others rounded out the capital city’s barbecue all-stars.
