If you want to know how to make the perfect supper that everyone besides vegans will love, then you have to check out this super simple recipe for chicken sausage linguine that I like to call Lampasas Linguine. In a house full of kids 7 and under with revolving taste buds from week to week, this is how we keep the peace in our Killeen-Temple, Texas home.

To feed a growing family of 5, recommend the following ingredients:

  1. 3 Roma tomatoes.
  2. 1 medium yellow onion.
  3. 1lb chicken sausage.
  4. 4-5 cloves of garlic.
  5. 6oz tomato paste.
  6. 1lb. linguine - fun word to say. This should have been the name of Mario's brother.
  7. 1/4lb cream cheese.
  8. 1/4lb shredded parmesan.
  9. Olive oil.
  10. Kosher salt and pepper.
  11. 2 TBS butter.
  12. 1 Italian baguette with 4oz softened butter and garlic powder.

Preheat your oven to 400.

Put on a stock pot of salted water to boil. After cleaning the produce cut the Romas into 6 wedges each by first halving, then each half into thirds. Toss the maters in some olive oil, then add some salt and pepper. Those go on an aluminum foil lined, baking tray to roast for 20 minutes. Dice the onion, finely chop the garlic.

Add some olive oil to a deep skillet over medium-high heat.

Brown the chicken sausage and onion. Once they are cooked, add the garlic for about 30 seconds to a minute. Add the tomato paste, and stir until everything is coated red. Toss in 2 tablespoons of butter, the cream cheese and blend. Once those are melted, add the parmesan and mix. Allow to simmer on low the rest of the meal prep.

Boil the pasta for 10 minutes.

Once the pasta is finished, drain and let cool. Cut the baguette in half, butter each piece well with the softened butter, and shake on a dusting of garlic powder.

Pull the tomatoes from the oven after 20 minutes, and stir them into the sauce. Place the baguette onto the baking sheet buttered side up, and cook in the still 400 degree oven for 10 minutes.

Fold the linguine into the sauce, make a side salad (optional), and pull the toast after 10 minutes. If you like slightly toastier bread, broil it for 1 minute before removing.

Once you're finished eating all the pasta and salad, it is imperative you soak up all the remaining sauce on your plate, or in your bowl with the garlic toast and eat every last piece. Beware you don't take a bite out of a finger. Also, I dare you to attempt to save some for later.
