As I got ready to come in this morning, I was sent an email by our editor Jason and the headline read as such:

"Brisket isn't barbecue"? Sir, you have basically declared WAR on our great state and our pit masters are not going to stand for it! As someone who has lived in Texas for over a decade, brisket in my opinion IS BBQ!!! Barbecue is defined as "a meal or gathering at which meat, fish, or other food is cooked out of doors on a rack over an open fire or on a portable grill". Is brisket not cooked in such a way? What am I missing here? I had to investigate. So I swung over to Aaron's Smoke House BBQ here in Copperas Cove and did some "work". Special thanks to the good folks over at Aaron's for hooking me up to prove my point!
